A Copycat Plant-Based Disney World Meal You Can Make at Home

In recent years, Disney has dedicated lots of time and attention to making sure that their menus are new, exciting…and inclusive of all diets.  Including vegans and vegetarians!  You can enjoy incredible plant based meals all over the parks.  But, what if you can’t get make it to Disney?  Here’s one of my favorite plant based copycat meals to make at home!

Kefta ‘Meatballs’ (from Docking Bay 7 at Hollywood Studios)

Ingredients:

  • 1 package of Beyond burger
  • 1 clove garlic, minced
  • 1/3 cup onion, diced
  • 3/4 cup quinoa, cooked
  • 1 tsp cumin
  • 1/2 tsp dried parsley
  • 1 Tbl soy sauce

Directions:

Preheat oven to 350 degrees F.  Cover a baking sheet with parchment paper.

Saute garlic and onion until translucent.

In a bowl, mix together cooked garlic and onions with remaining ingredients.  Form into approximately 2 inch balls.

Arrange on cookie sheet and bake for 15 minutes.

Hummus Fries (from Epcot’s International Food and Wine Festival)

Ingredients:

  • 8 oz dry chickpeas
  • 1 Tbl garlic, minced
  • 1 Tbl parsley, chopped
  • 1 Tbl cumin
  • 1/2 Tbl chili powder
  • 1/2 Tbl paprika
  • Salt
  • 1-2 tsp lemon juice
  • 3 Tbl whole wheat flour
  • Oil for frying

Directions:

Soak dry chickpeas overnight.  Drain and rinse.

Place soaked chickpeas, garlic, and parsley into food processor.  Process until crumbly.

Transfer to a bowl and stir in remaining ingredients.  Mixture should be slightly damp and hold together when compressed.

Mold into a tightly packed square or rectangle with a depth of no more than 1 inch.  It can be helpful to use a baking pan or other container to accomplish this.  Freeze mixture for at least 1 hour.

Cut into square or rectangles approximately 2 inches in length.

Heat oil in a deep pan to 325 degrees.  Fry hummus squares 2-3 at a time for 5-8 minutes.  Drain on a paper towel after removing from oil.

Serving suggestion:  Dice up a tomato and cucumber to serve alongside your kefta and hummus fries…and top with just a bit of tzatziki sauce!

Dole Whip

This is the easiest.  Turns out, you can buy Dole whip base off Amazon!  It’s easy to mix up and process in your home ice cream maker for a fresh, on demand treat.  Personally, I use 1 cup of mix to 2 cups water and 1 cup milk (plant based or dairy, depending on your preference).
